    Shortening food supply chains attracts increasing support from policymakers, to improve returns to farmers and stimulate rural development. However, there is a lack of empirical evidence regarding the impacts of short food supply chains on local economies. To address this, the article quantifies the impacts of short food supply chains on local economies, using the Keynesian-based Local Multiplier 3 method (LM3), applied to a unique dataset of 122 farm businesses from five European Union countries (France, Hungary, Italy, Poland and the United Kingdom). Estimations cover 305 market chains, comprising both short and long food supply chains, in which sampled farmers participate. The results indicate that the revenues from farm production remain largely within local economies, generating a substantial multiplier effect (LM3 > 2). This effect stems from purchases of farm inputs locally including, in the first instance, hiring local labour, as well as the expenditures of local suppliers that re-spend part of their revenues within the local area. The multiplier effects of short food supply chains are similar to long food supply chain equivalents as both use largely local labour and source tradable inputs locally. In shaping food chain policy a broader set of socioeconomic benefits to local development from selling through short food supply chains should be considered. International audience

    Our study examined the financial situation of small and medium-sized enterprises (SMEs) in the health industry of the Visegrad Four (V4: Czech Republic, Poland, Slovakia, Hungary) in the period 2008–2021. The basis of the analysis was the reports available in the Crefoport database. During the analysis, we took into account four key financial indicators (liquidity, profitability (ROA), efficiency, capital structure) and used the Kaplan–Meier survival estimator to examine the viability of enterprises. In our study, we draw attention to the national economic importance of healthcare SMEs in the CEE region, and within that, in the V4 countries during the period of Industry 4.0 and the COVID-19 pandemic. Our research goal is to examine the life expectancy of healthcare enterprises operating in Hungary at the time of their establishment, in relation to the SMEs of the other three countries. The health industry SMEs of the V4 countries showed positive growth (+18%) in the period under review compared to the average of the 3 years before the COVID-19 pandemic, in the average of the first 3 years of the COVID-19 pandemic. The study paid particular attention to the life expectancy of businesses at the time of establishment. According to our results, the life expectancy of healthcare enterprises operating in Hungary at the time of establishment is high, but it does not differ significantly from that of the other examined countries. Our study highlights that the health industry SMEs of the examined countries do not need financial support; they are standing on a stable footing, which provides them with an excellent opportunity to either expand abroad or introduce innovations.

    Objective: According to the World Health Organisation’s estimates, food contamination is linked to 23 million cases of illness and 5,000 deaths per year in Europe. While changes in food production and distribution play an important role in managing contamination risk, foodborne illnesses can originate in food-handling practices at home. This study aimed to assess how a food safety education initiative in which students learned about food safety risks and minimising risk behaviour improved students’ knowledge about food safety. Setting: Three public schools, two in Hungary and one in Portugal. Methods: A study of 105 Hungarian and Portuguese students between 11 and 18 years of age were invited to prepare Personal Meaning Maps before and after the delivery of a food safety lesson delivered by a school science teacher. Knowledge and risk perceptions of food safety, before and after the delivery of the lesson, were assessed both quantitatively and qualitatively. Results: Food safety topics that were scored highest were those that already had strong scores in the diagnostic phase, such as those related to personal hygiene and use-by dates. However, the largest increases in mastery scores were in less-known-about topics such as cold chain and cross-contamination risks. Idea associations take place often by linking specific contents to already-known-about concepts. Conclusion: Findings show that students more readily engaged with practical concepts directly linked to their experience of food handling at home than to more abstract concepts of food safety and contamination.

    The residential kitchen is often heavily colonized by microbes originating from different sources, including food and human contact. Although a few studies have reported the bacterial composition in cleaning utensils and surface samples there is limited knowledge of the bacterial diversity across different sample types, households, and countries. As part of a large European study, we have identified the microbiota of 302 samples from cleaning utensils (sponges and cloths), kitchen surfaces (sinks, cutting boards, countertops, tap handles, and a pooled sample of other handles) in 74 households across 5 countries (France, Hungary, Norway, Portugal, and Romania).     In Europe, today's affordable housing and co-housing projects represent complex products, complementing the physical intervention with economic and social techniques. This means that purely environmental and economical evaluation is not sufficient for these projects. While environmental and economical evaluation methodologies are widespread and advanced in the construction sector, methodologies to evaluate the social impacts of housing projects are rarely used and therefore underdeveloped.This study elaborates a framework to evaluate and monitor the social impacts of a complex social housing and co-housing project. The method adopted implements the Social Life Cycle Assessment, integrating a Post Occupancy Evaluation as the main tool for collecting and analysing data. The presented assessment framework is elaborated for the E-Co-Housing Model, a new experimental model so far as the development of affordable housing in Budapest is concerned. However, it delivers a starting point for more complex sustainability analysis of residential buildings in general.The guideline for the Evaluation Framework is the methodology of the Social Life Cycle Assessment of Products, clarifying and improving some of its usual elements. The study of the E-Co-Housing Model shows that housing products, especially affordable and co-housing projects significantly differ from other products. The differences are their main stakeholder groups, their life cycle stages and in their impact ways too. Therefore, housing products need a special S-LCA methodology to assess in a balanced way the complex aspects of its environmental, economic, and social sustainability.

    The lack of high-grade scandium (Sc) ores and recovery strategies has stimulated research on the exploitation of non-ore-related secondary sources that have great potential to safeguard the critical raw materials supply of the EU's economy. Waste materials may satisfy the growing global Sc demand, specifically residues from titanium dioxide (TiO2) production. New technologies are being developed for the recovery of Sc from such residues; however, the possible environmental impacts of intermediary products and residues are usually not considered. In order to provide a comprehensive ecotoxicity characterisation of the wastes and intermediate residues resulting from one promising new technology, acid-resistant nanofiltration (arNF), a waste-specific ecotoxicity toolkit was established. Three ecotoxicity assays were selected with specific test parameters providing the most diverse outcome for toxicity characterisation at different trophic levels: Aliivibrio fischeri (bacteria) bioluminescence inhibition (30 min exposure), Daphnia magna (crustacean) lethality and immobilisation (24 h exposure) and Lemna minor (plant) growth inhibition with determination of the frond number (7 d exposure). According to our results, the environmental impact of the generated intermediate and final residues on the aquatic ecosystem was mitigated by the consecutive steps of the filtration methods applied. High and statistically significant toxicity attenuation was achieved according to each test organism: toxicity was lowered based on EC20 values, according to the A. fischeri bioluminescence inhibition assay (by 97%), D. magna lethality (by 99%) and L. minor frond number (by 100%), respectively, after the final filtration step, nanofiltration, in comparison to the original waste. Our results underline the importance of assessing chemical technologies' ecotoxicological and environmental impacts with easy-to-apply and cost-effective test methods to showcase the best available technologies.

Trends in food Science and Technology 133, 87-98 Abstract A significant part of foodborne infections is caused by food eaten at home, and food safety messages are given to help consumers mitigate risk. The World Health Organisation “Five Keys to Safer Food”, developed about 20 years ago has been used with success worldwide to provide general advice on how to prepare food safely. In this commentary, we discuss how food safety messages could be updated using a holistic approach built on implementation science, considering new food consumption patterns and insights from natural and social sciences. A stepwise approach for developing and evaluating food safety messages, performed in the European project SafeConsume, is presented. The top pathogen-food combinations associated with foodborne disease in Europe were combined with common consumer practices to identify risky behaviours. Food safety messages were suggested and assessed for understanding as well as capability, opportunity, and motivation in an expert survey. Overall, the food safety topics developed overlapped with those from WHO. The opportunity and motivation for changing behaviour, (e.g., choose pasteurised egg) were identified as important restrictions for uptake of messages. Also, understanding terminology, (e.g “thoroughly cooked”) was a challenge. Therefore, there is a need to be specific, without excluding other safe alternatives or make lengthy explanations. The food safety messages suggested by the expert group were considered as more likely to be implemented among domestic cooks, resulting in safer practice than corresponding WHO messages. WHO should reconsider the preventive risk communication based on new knowledge and challenges.

    Freshwater aquaculture has a significant role in fish production and biodiversity conservation. Due to climate change, however, the sustenance of fish farms became more challenging, endangering both people and natural values. The establishment of multi-purpose fishpond systems, utilizing ecosystem services besides fish production, could serve as a long-term solution for this problem. However, the lack of knowledge about fishponds’ ecosystem services creates an obstacle in the process. We would like to lower this barrier by mapping 13 different ecosystem services of White Lake, one of the most prominent fishpond systems in Hungary. The results of two different participatory mapping techniques indicated that standing waters, reedy areas, and canals, possessed the highest potential values in the provision of the listed ecosystem services, marking them as the most important areas for future developments. In the case of current sources, local experts linked the highest values to reedy areas and lookout towers. Participatory mapping also indicated that microclimate regulation and bird watching were the most widely used ecosystem services after fish production. By collecting and visualizing experts’ spatial data about White Lakes’ ecosystem services, our unique paper has the potential to serve future decision-making and provide a basis for further studies on this topic.

    Abstract Management of risks and uncertainty played an important role in the rise of human cultures from the beginning. Long journey has been taken from deciphering spiritual signs to the usage of artificial intelligence. Communication about risks also went through an evolutionary path and became highly specialised. During previous decades, food safety risk communication developed to be a distinguishable and well-grounded profession. Based on literature of the last 40 years, the evolution of food safety risk communication is presented from the perspectives of consumer involvement, methodological approach, and challenges. Expected future trends are also unfolded during the analysis. The paper identifies 5 + 1 stages in the evolution of food safety risk communication: Pre-risk communication era, Deficit model, Dialogue model, Partnership model, and Behavioural insight model. Expected future trends are summarised as a 6th stage, called Controlled risk environment model. The models are separated by level of consumer involvement and methodological approach. Consumer science played a crucial role in the evolutionary procedure. Despite the observed advancement between the stages, the application of each communication model might have justification under certain circumstances. In practice, the different stages have no clear boundaries, and the models can overlap. An organisation can even move on to the next phase by skipping a previous evolutionary step.

    The bauxite residue is produced in high amounts all over the world. This industrial waste is a possible soil-amendment material. Although the material has been produced in high amounts, it is not frequently reused. We investigated its ecotoxicological effects on two annelid species: Dendrobaena veneta and Enchytraeus albidus. Two forms of bauxite residue (BR: S – untreated; G – dried, filter pressed, and gypsum neutralized) and three natural soils (NH: Nagyhörcsök, NY: Nyírlugos, OB: Őrbottyán) were examined. To determine the safe concentration of bauxite residue in soil on the short, acute mortality and sublethal behavioral tests (peristaltic motion-frequency) were performed. The bauxite residue addition (<5/10%) raised the pH and water holding capacity level of soils. Both types of the bauxite residue increased the motion-frequency of the worms. The untreated type had an acute mortality effect (>25%). Both species refused the soils containing both bauxite residue types at higher concentrations (>10%). Slight bauxite residue addition may improve the life circumstances of annelids in acidic sandy soils because of the potential rise of the pH level and water holding capacity.

    Shortening food supply chains attracts increasing support from policymakers, to improve returns to farmers and stimulate rural development. However, there is a lack of empirical evidence regarding the impacts of short food supply chains on local economies. To address this, the article quantifies the impacts of short food supply chains on local economies, using the Keynesian-based Local Multiplier 3 method (LM3), applied to a unique dataset of 122 farm businesses from five European Union countries (France, Hungary, Italy, Poland and the United Kingdom). Estimations cover 305 market chains, comprising both short and long food supply chains, in which sampled farmers participate. The results indicate that the revenues from farm production remain largely within local economies, generating a substantial multiplier effect (LM3 > 2). This effect stems from purchases of farm inputs locally including, in the first instance, hiring local labour, as well as the expenditures of local suppliers that re-spend part of their revenues within the local area. The multiplier effects of short food supply chains are similar to long food supply chain equivalents as both use largely local labour and source tradable inputs locally. In shaping food chain policy a broader set of socioeconomic benefits to local development from selling through short food supply chains should be considered. International audience

    Our study examined the financial situation of small and medium-sized enterprises (SMEs) in the health industry of the Visegrad Four (V4: Czech Republic, Poland, Slovakia, Hungary) in the period 2008–2021. The basis of the analysis was the reports available in the Crefoport database. During the analysis, we took into account four key financial indicators (liquidity, profitability (ROA), efficiency, capital structure) and used the Kaplan–Meier survival estimator to examine the viability of enterprises. In our study, we draw attention to the national economic importance of healthcare SMEs in the CEE region, and within that, in the V4 countries during the period of Industry 4.0 and the COVID-19 pandemic. Our research goal is to examine the life expectancy of healthcare enterprises operating in Hungary at the time of their establishment, in relation to the SMEs of the other three countries. The health industry SMEs of the V4 countries showed positive growth (+18%) in the period under review compared to the average of the 3 years before the COVID-19 pandemic, in the average of the first 3 years of the COVID-19 pandemic. The study paid particular attention to the life expectancy of businesses at the time of establishment. According to our results, the life expectancy of healthcare enterprises operating in Hungary at the time of establishment is high, but it does not differ significantly from that of the other examined countries. Our study highlights that the health industry SMEs of the examined countries do not need financial support; they are standing on a stable footing, which provides them with an excellent opportunity to either expand abroad or introduce innovations.

    Objective: According to the World Health Organisation’s estimates, food contamination is linked to 23 million cases of illness and 5,000 deaths per year in Europe. While changes in food production and distribution play an important role in managing contamination risk, foodborne illnesses can originate in food-handling practices at home. This study aimed to assess how a food safety education initiative in which students learned about food safety risks and minimising risk behaviour improved students’ knowledge about food safety. Setting: Three public schools, two in Hungary and one in Portugal. Methods: A study of 105 Hungarian and Portuguese students between 11 and 18 years of age were invited to prepare Personal Meaning Maps before and after the delivery of a food safety lesson delivered by a school science teacher. Knowledge and risk perceptions of food safety, before and after the delivery of the lesson, were assessed both quantitatively and qualitatively. Results: Food safety topics that were scored highest were those that already had strong scores in the diagnostic phase, such as those related to personal hygiene and use-by dates. However, the largest increases in mastery scores were in less-known-about topics such as cold chain and cross-contamination risks. Idea associations take place often by linking specific contents to already-known-about concepts. Conclusion: Findings show that students more readily engaged with practical concepts directly linked to their experience of food handling at home than to more abstract concepts of food safety and contamination.

    The residential kitchen is often heavily colonized by microbes originating from different sources, including food and human contact. Although a few studies have reported the bacterial composition in cleaning utensils and surface samples there is limited knowledge of the bacterial diversity across different sample types, households, and countries. As part of a large European study, we have identified the microbiota of 302 samples from cleaning utensils (sponges and cloths), kitchen surfaces (sinks, cutting boards, countertops, tap handles, and a pooled sample of other handles) in 74 households across 5 countries (France, Hungary, Norway, Portugal, and Romania).     In Europe, today's affordable housing and co-housing projects represent complex products, complementing the physical intervention with economic and social techniques. This means that purely environmental and economical evaluation is not sufficient for these projects. While environmental and economical evaluation methodologies are widespread and advanced in the construction sector, methodologies to evaluate the social impacts of housing projects are rarely used and therefore underdeveloped.This study elaborates a framework to evaluate and monitor the social impacts of a complex social housing and co-housing project. The method adopted implements the Social Life Cycle Assessment, integrating a Post Occupancy Evaluation as the main tool for collecting and analysing data. The presented assessment framework is elaborated for the E-Co-Housing Model, a new experimental model so far as the development of affordable housing in Budapest is concerned. However, it delivers a starting point for more complex sustainability analysis of residential buildings in general.The guideline for the Evaluation Framework is the methodology of the Social Life Cycle Assessment of Products, clarifying and improving some of its usual elements. The study of the E-Co-Housing Model shows that housing products, especially affordable and co-housing projects significantly differ from other products. The differences are their main stakeholder groups, their life cycle stages and in their impact ways too. Therefore, housing products need a special S-LCA methodology to assess in a balanced way the complex aspects of its environmental, economic, and social sustainability.

    The lack of high-grade scandium (Sc) ores and recovery strategies has stimulated research on the exploitation of non-ore-related secondary sources that have great potential to safeguard the critical raw materials supply of the EU's economy. Waste materials may satisfy the growing global Sc demand, specifically residues from titanium dioxide (TiO2) production. New technologies are being developed for the recovery of Sc from such residues; however, the possible environmental impacts of intermediary products and residues are usually not considered. In order to provide a comprehensive ecotoxicity characterisation of the wastes and intermediate residues resulting from one promising new technology, acid-resistant nanofiltration (arNF), a waste-specific ecotoxicity toolkit was established. Three ecotoxicity assays were selected with specific test parameters providing the most diverse outcome for toxicity characterisation at different trophic levels: Aliivibrio fischeri (bacteria) bioluminescence inhibition (30 min exposure), Daphnia magna (crustacean) lethality and immobilisation (24 h exposure) and Lemna minor (plant) growth inhibition with determination of the frond number (7 d exposure). According to our results, the environmental impact of the generated intermediate and final residues on the aquatic ecosystem was mitigated by the consecutive steps of the filtration methods applied. High and statistically significant toxicity attenuation was achieved according to each test organism: toxicity was lowered based on EC20 values, according to the A. fischeri bioluminescence inhibition assay (by 97%), D. magna lethality (by 99%) and L. minor frond number (by 100%), respectively, after the final filtration step, nanofiltration, in comparison to the original waste. Our results underline the importance of assessing chemical technologies' ecotoxicological and environmental impacts with easy-to-apply and cost-effective test methods to showcase the best available technologies.

Trends in food Science and Technology 133, 87-98 Abstract A significant part of foodborne infections is caused by food eaten at home, and food safety messages are given to help consumers mitigate risk. The World Health Organisation “Five Keys to Safer Food”, developed about 20 years ago has been used with success worldwide to provide general advice on how to prepare food safely. In this commentary, we discuss how food safety messages could be updated using a holistic approach built on implementation science, considering new food consumption patterns and insights from natural and social sciences. A stepwise approach for developing and evaluating food safety messages, performed in the European project SafeConsume, is presented. The top pathogen-food combinations associated with foodborne disease in Europe were combined with common consumer practices to identify risky behaviours. Food safety messages were suggested and assessed for understanding as well as capability, opportunity, and motivation in an expert survey. Overall, the food safety topics developed overlapped with those from WHO. The opportunity and motivation for changing behaviour, (e.g., choose pasteurised egg) were identified as important restrictions for uptake of messages. Also, understanding terminology, (e.g “thoroughly cooked”) was a challenge. Therefore, there is a need to be specific, without excluding other safe alternatives or make lengthy explanations. The food safety messages suggested by the expert group were considered as more likely to be implemented among domestic cooks, resulting in safer practice than corresponding WHO messages. WHO should reconsider the preventive risk communication based on new knowledge and challenges.

    Freshwater aquaculture has a significant role in fish production and biodiversity conservation. Due to climate change, however, the sustenance of fish farms became more challenging, endangering both people and natural values. The establishment of multi-purpose fishpond systems, utilizing ecosystem services besides fish production, could serve as a long-term solution for this problem. However, the lack of knowledge about fishponds’ ecosystem services creates an obstacle in the process. We would like to lower this barrier by mapping 13 different ecosystem services of White Lake, one of the most prominent fishpond systems in Hungary. The results of two different participatory mapping techniques indicated that standing waters, reedy areas, and canals, possessed the highest potential values in the provision of the listed ecosystem services, marking them as the most important areas for future developments. In the case of current sources, local experts linked the highest values to reedy areas and lookout towers. Participatory mapping also indicated that microclimate regulation and bird watching were the most widely used ecosystem services after fish production. By collecting and visualizing experts’ spatial data about White Lakes’ ecosystem services, our unique paper has the potential to serve future decision-making and provide a basis for further studies on this topic.

    Abstract Management of risks and uncertainty played an important role in the rise of human cultures from the beginning. Long journey has been taken from deciphering spiritual signs to the usage of artificial intelligence. Communication about risks also went through an evolutionary path and became highly specialised. During previous decades, food safety risk communication developed to be a distinguishable and well-grounded profession. Based on literature of the last 40 years, the evolution of food safety risk communication is presented from the perspectives of consumer involvement, methodological approach, and challenges. Expected future trends are also unfolded during the analysis. The paper identifies 5 + 1 stages in the evolution of food safety risk communication: Pre-risk communication era, Deficit model, Dialogue model, Partnership model, and Behavioural insight model. Expected future trends are summarised as a 6th stage, called Controlled risk environment model. The models are separated by level of consumer involvement and methodological approach. Consumer science played a crucial role in the evolutionary procedure. Despite the observed advancement between the stages, the application of each communication model might have justification under certain circumstances. In practice, the different stages have no clear boundaries, and the models can overlap. An organisation can even move on to the next phase by skipping a previous evolutionary step.

    The bauxite residue is produced in high amounts all over the world. This industrial waste is a possible soil-amendment material. Although the material has been produced in high amounts, it is not frequently reused. We investigated its ecotoxicological effects on two annelid species: Dendrobaena veneta and Enchytraeus albidus. Two forms of bauxite residue (BR: S – untreated; G – dried, filter pressed, and gypsum neutralized) and three natural soils (NH: Nagyhörcsök, NY: Nyírlugos, OB: Őrbottyán) were examined. To determine the safe concentration of bauxite residue in soil on the short, acute mortality and sublethal behavioral tests (peristaltic motion-frequency) were performed. The bauxite residue addition (<5/10%) raised the pH and water holding capacity level of soils. Both types of the bauxite residue increased the motion-frequency of the worms. The untreated type had an acute mortality effect (>25%). Both species refused the soils containing both bauxite residue types at higher concentrations (>10%). Slight bauxite residue addition may improve the life circumstances of annelids in acidic sandy soils because of the potential rise of the pH level and water holding capacity.
